Way Too Simple Chicken Caesar Wraps

This past weekend I got to help bless and honor my wonderful parents with a surprise dinner and party that was filled with family members who came from all over to be there for them.


There was even a hilarious skit performed by my nephews that hit on every odd and funny characteristic of these old folks we love so much.


And a good party is always filled with good food. These chicken wraps were a hit and they were so simple to make ahead!


Because they were so easy, this would be a perfect make-ahead lunch option for the week. Be choosey with your dressing, most have bad ingredients so do your best to find one with a decent oil and low sugar.

Ingredients

2 pounds chicken (can be thighs or breasts)

1 cup Caesar dressing

2 Tbsp fresh parsley, minced

Salt and pepper to taste

Shredded Parmesan cheese

1 head lettuce, leaves peeled


Directions

1) Cook and shred chicken breasts, preferably in a slow cooker (high for 3 hours) or Instant Pot ('Manual' for 12 minutes, natural release). Shred the chicken once cooked (easiest way is with an electric mixer).

2) Mix the shredded chicken with dressing, parsley, salt and pepper.

3) Add the chicken to a lettuce leaf and top with a little Parmesan cheese.
