Prep the shredded chicken during a food prep day and you've got yourself a super fast dinner that you can whip up in less than 30 minutes!
This recipe will be a regular in my household, and I hope you love it too!

Southwest Chicken Salad
Serves 5

Ingredients
3 cups chopped lettuce
2 cups cooked, shredded chicken
3/4 cups corn
3/4 cup black beans
1 large tomato, diced
1 avocado, diced
1/4 cup red onion, diced
1/2 cup shredded cheddar cheese
1/4 cup cilantro, chopped
Dressing:
1/2 cup sour cream
1 Tbsp olive oil
1/2 lime, juiced
1/2 jalapeno, seeds and ribs removed, diced
1 tsp salt
1 tsp chili powder
1 tsp cumin
1/4 tsp pepper
1/4 tsp onion powder
1/4 tsp garlic powder
Directions
1) In a small mixing bowl, add all of the dressing ingredients and mix to combine, set aside.
2) In a large mixing bowl, toss the veggies, chicken and cheese together.
3) Add the dressing to the chicken and veggies, toss together. Enjoy!
