Meatloaf (Gluten-Free)

I didn't grow up with meatloaf, I always thought it sounded weird and gross as a kid.


Now that I'm a mom, it's a life-changer! I can whip it up during my food prep day, and even if I don't, it's easy enough to put together any day of the week.


Here's a basic recipe that takes out the breadcrumbs and adds in a little BBQ twist!



Ingredients

1 pound ground beef

2 eggs

3/4 cup gluten-free oats

1/2 cup milk (any type will work)

1/4 onion, diced small

1 tsp salt

1/2 tsp pepper

1 Tbsp Italian seasoning

1/4 cup low-sugar BBQ sauce, 1/4 cup additional for topping


Directions

1) Preheat oven to 375*F

2) In a large bowl, mix together all ingredients

3) Turn out the meat mixture into a loaf pan, spread out evenly

4) Top with the remaining 1/4 cup of BBQ sauce

5) Bake 45-60 minutes, until center of the loaf reaches 165*F
