Baked Blueberry Oatmeal

This recipe has become a favorite for me and the kids. It's a great one to make at the start of the week for easy breakfasts on busy mornings.


I also love a recipe that you can adjust a little here and there to make it feel like a whole new dish anytime you want. For instance, instead of blueberries, use raspberries or apples. You could add in flaxseeds or other seeds to boost the healthy fat factor. You could even add in a scoop of collagen to the milk to boost the protein.


Whatever you do, this recipe is forgiving and it'll be yummy!




Baked Blueberry Oatmeal

Ingredients

2 cups old fashioned oats

1 cup chopped pecans

2 tsp ground cinnamon

1 tsp baking powder

1/2 tsp salt

Pinch of ground nutmeg

1 3/4 cups milk of your choice

1/4 cup honey

2 eggs

3 Tbsp melted, cooled butter or coconut oil

2 tsp vanilla

2 cups fresh or frozen blueberries


Directions

1) Preheat oven to 375*F.

2) In a large mixing bowl mix together all ingredients.

3) Pour into a 13x9 inch baking dish. Bake for 40-45 minutes, until golden around edges and top.

4) Enjoy with a little extra splash of milk in a bowl.
