I love guacamole and I love a simple chicken salad that can whip up easily for a fast lunch - combine the two and you've got this recipe!
Recipe note: The oil and lime juice help the avocado keep from getting brown too quickly, but if you're looking to make this for the week's lunch you could combine all ingredients except for the avocado and add 1/4 avocado per serving.
Ingredients
1 1/2 cups cooked shredded or diced chicken
1 avocado
1/8 cup diced red onion
1/2 tsp salt
Dash of garlic powder
1 Tbsp avocado oil or olive oil
1/2 lime, juiced
Optional: scoop salad with tortilla chips, crackers or rice cake
Directions
1) Add all ingredients to a large mixing bowl. Mix to combine.
2) Enjoy with chips, crackers or even on top of a plain rice cake
