30 Minute Chicken Fajitas

I love a good Taco Tuesday option, especially one that is super quick and very hands-off!

To make these even faster, slice the chicken and veggies in advance and marinate in the seasonings and oil so that all you have to do on a busy weeknight is heat your oven and dump the chicken and veggies into a baking dish and throw it in!


2-3 chicken breasts or boneless chicken thighs, sliced into bite-size pieces

1 green bell pepper, seeded and sliced

1 colored bell pepper (yellow, red or orange - your choice!), seeded and sliced

1/2 onion, sliced

1 Tbsp avocado oil

1 tsp chili powder

1 tsp cumin

1/2 tsp salt

1/4 tsp pepper

1/2 lime, juiced (optional)

8 corn tortillas, warmed

Toppings: shredded cheddar cheese, salsa, sour cream, cilantro, green onion


1) Preheat oven to 400*F.

2) Toss the chicken, veggies, seasonings and oil together in a glass baking dish.

3) Bake in the oven for 25-30 minutes.

4) Assemble your fajitas with a tortilla, the chicken and veggies, and your desired toppings.
