Being from Minnesota, we LOVE our hot dishes, or casseroles if that’s what you call them where you’re from.
From a food prep perspective, hot dishes or casseroles are my favorite kind of meals because they are easy to make a one-pot meal, make ahead, and easy to keep for leftovers.
Tater Tot Hotdish is a classic for us Midwesterners and I have a husband who grew up on it.
Traditionally, we 90’s kids had this hot dish made with cream of mushroom soup. These “cream of whatever” soups can have their place in our lives, but they can be higher in calories, contain more ingredients, and have gluten, if that’s something you’re trying to avoid.
This recipe creates a creamy sauce by using starch. You can use cornstarch or potato starch, whichever you prefer. Either way it’ll turn out delish!
This is the kind of recipe everyone enjoys! One of those classic meals your kids will remember and one day come back home and ask for.
Tater Tot Hotdish
Serves 6-8
Calories= 408, Protein= 22g, Fat= 26g, Carbs= 24g
Ingredients
1 pound ground beef
1/2 onion, diced
12oz frozen mixed vegetables
1 cup milk (can use dairy or a nondairy milk)
1 Tbsp potato starch (or cornstarch)
1/2 cup beef broth
Salt and pepper to taste
1 cup shredded cheese
30 oz frozen tater tots
Directions
1)Preheat oven to 400°F.
2) In a large skillet over medium-high heat, brown the ground beef with the diced onion until meat is fully browned. Drain excess fat.
3) Add to the pan the frozen veggies and milk.
4) Measure the broth in a liquid measuring cup and stir to dissolve the cornstarch.
5) Then pour the broth into the pan with the meat and veggies. Bring to a boil and let the liquid thicken, about 3-5 minutes. Season with salt and pepper to your liking.
6) Transfer the mixture from the skillet to a casserole dish. Spread evenly.
7) Top the meat evenly with cheese. Layer the tater tots for a final layer.
8) Bake the hot dish for 20-25 minutes until the tots are golden brown.
