Spring time has got me all into the fresh greens and produce that's in season - and I'm not usually very big into salads. Salads can get boring so it's good to jazz things up a bit, and what better way than with bacon?!
You can make this salad with any dressing you like, but be choosey about the type you buy. I love making simple, healthy swaps - especially when you can find healthy convenience foods to make life easier.
Primal Kitchen is a great brand and they have many salad dressings to pick from.
When in doubt, make your own salad dressing - a simple honey mustard dressing recipe is listed below!
Simple Chicken & Greens Salad
serves 2
Ingredients
1 cup chicken, cooked and shredded (or cubed)
4 slices bacon, cooked and chopped
2 stalks celery, diced
2 Tbsp red onion, diced small
1/4-1/2 cup salad dressing
Salt and pepper to taste
2-3 cups salad greens of your choice (I love Spring Mix this time of year!)
Directions
1) In a large mixing bowl mix together the chicken, bacon, celery, red onion and dressing together to combine. Season with salt and pepper if you like.
2) Divide into 2-3 portions and serve over a cup of greens.
Honey Mustard Dressing:
Ingredients
1/4 cup Dijon mustard
1/4 cup honey
1/4 cup vinegar
1/4 cup avocado oil
1 tsp salt
Directions
Blend all ingredients together, store in a jar.
