I love a simple dinner that is almost effortless but that results in something full of flavor and the whole family enjoys!
Sheet pan meals are my jam - feel free to add or swap out the meat and veggies as you like, and get creative about it!
2 small sweet potatoes, peeled and diced
1 cup new potatoes, halved
3 Tbsp avocado oil (or other type of healthy oil you can cook at high heat)
1 Tbsp Dijon mustard
1 tsp sea salt
1/2 tsp pepper
1 tsp dried herb like thyme, rosemary, or Italian seasoning (whatever you have around)
1) Preheat oven to 350*F.
2) Line a rimmed baking sheet with foil, add all of the chopped potatoes to the pan.
3) Mix together the oil and mustard in a small dish and pour over the veggies. Toss veggies to coat in the oil and mustard.
4) Season potatoes with salt and pepper to your liking.
5) Top the potatoes with the brats. Bake 30-45 minutes, until brats are browned and potatoes are cooked through.
