This recipe has been memorized by this mama because I am NOT a morning person and I don't like breakfast taking too much time or effort.
Using the Instant Pot can be a little defeating because you have to account for the warm up time and the pressure release time. But using this cooker really allows you to cook a meal hands-off, which gives you a chance to either get ready in the morning or chase around your kids who always seem to need you most when you're in the kitchen.
Ingredients
2 cups almond milk
1 cup water
1 cup steel cut oatmeal
dash salt
1 tsp cinnamon
1/2 tsp vanilla
Optional Toppings: butter or coconut oil, raisins, walnuts, or other nuts, seeds or dried fruit
Directions
1) Add all ingredients to the Instant Pot, stir together.
2) Cover and lock the lid, set to 'Manual' for 3 minutes.
3) Allow pressure to naturally release.
4) Top with your favorite toppings
