Homemade Cauliflower Pizza Crust

Cauliflower is a magic food and so versatile, you can even make pizza with it! Who would have thought!


This is the basic crust recipe and from here get creative with your toppings!



Ingredients

1 head cauliflower, chopped small (or buy 4 cups riced cauliflower)

4 eggs

2 cups Mozzarella cheese, shredded

3 tsp oregano

4 cloves garlic, minced

1 tsp salt

1/2 tsp pepper


Pepperoni Cheese Pizza toppings:

1-2 cups marinara sauce or pizza sauce

2 cups shredded pizza cheese mix

Pepperonis to layer on top


BBQ Chicken Pizza toppings:

1 cup cooked, shredded chicken

1/8 cup red onion, diced

2 cups Mozzarella cheese, shredded

5 strips bacon, chopped and cooked to brown


Directions

1) Preheat oven to 425*F.

2) Add riced cauliflower to a large microwave-safe bowl. Microwave on high for 10 minutes.

3) Add to the cauliflower the eggs, cheese, and seasonings. Mix to combine.

4) Lay a sheet of parchment paper on a rimmed baking pan and spread out the cauliflower mixture into an even layer creating a large, flat rectangle shape.

5) Bake for 25 minutes, until the crust starts to get golden. Remove from oven.

6) Add your preferred sauce and toppings to your pizza, bake for an additional 15 minutes. Optional: broil for 5 minutes to brown the cheese.
