Ground Turkey & Sweet Potato Hash

Hash - the term for busy moms that simply means: whatever is in the fridge to throw in a pan for dinner.
It's not fancy. It's just a simple meal of simple food!
But honestly, this recipe is delicious and you could easily make this your own by throwing in any veggies you need to use up before they go bad. This version here tastes like Thanksgiving, and I can't get enough!
I even threw on some shredded cheese for good measure, because why not?!

Ground Turkey & Sweet Potato Hash
Serves 4-6
Calories: 330, Protein: 31g, Fat: 17g, Carbs: 15g
Ingredients
1 pound ground turkey
12 oz bag frozen diced sweet potatoes (or about 2 medium sized sweet potatoes peeled and cubed)
2 ribs celery, diced
Salt and pepper to taste
1/2 Tbsp Italian seasoning
1/2 cup shredded mozzarella cheese
Directions
1) Add the ground turkey to a large skillet nd brown over medium-high heat, breaking the meat up into bits.
2) Add in the diced sweet potatoes, celery and seasonings. Stir and cook a few minutes to toss together.
3) Reduce the heat to low and cover, let it cook for about 5-10 minutes until the sweet potatoes are soft when pierced with a fork.
4) Sprinkle the cheese over everything and allow to melt on top.
