Budget-Saver Stir Fry Lettuce Wraps

Eating real food is what I'm about. But I'm also one for saving a dime or two and I appreciate a fast meal that doesn't cost me much money to make!


This meal really came about because this is what I had around to feed my family after a busy weekend. I didn't really want to cook this night but I also wanted something that was going to be nice to my body.


Use literally any frozen veggie you have around or any fresh veggie you need to use up in your fridge! This is one of those meals you can whip up with whatever you've got, that's why I love it.



Ingredients

1 pound ground beef

1/2 tsp salt

1/2 tsp pepper

1 tsp ground ginger

1 tsp (or more) sriracha

1 tsp honey

2-3 Tbsp coconut aminos (to replace yucky soy)

1 8 oz bag frozen mixed veggies

1/2 lettuce head, leaves peeled off


Directions

1) Heat a large skillet over medium-high heat. Add ground beef and brown. Drain excess fat from the meat.

2) Season meat with salt, pepper, ginger, sriracha, honey and coconut aminos.

3) Add in the frozen veggies and stir to combine. Cook over medium-low heat until veggies are cooked through and hot.

4) Serve meat mixture onto lettuce leaves and wrap the leaf around like a taco and enjoy!
