This salad has become a family favorite and it's what I'm always asked to bring to get togethers. But who can blame them when you combine broccoli, bacon and mayo together and call it a healthy salad?!
The key to making this healthy salad is the mayo choice you choose. I love to make my own mayo because it's easy and I get to be in control of the ingredients. If you don't have the equipment or the 2 minutes of time it takes to make (because sometimes we honestly don't!) I recommend using one of these mayo options (click the image to check them out on Amazon, affiliate links):
To make your own mayo all you need is an immersion blender and the ingredients:
1 egg yolk
2/3 cup avocado oil
1 tsp salt
1/2 tsp mustard
1/4 tsp garlic powder
2 Tbsp vinegar
All you do is add the ingredients to a tall jar and blend it together with your immersion blender. Blend it together just until the oil is combined and incorporated in with the egg to create a nice, thick consistency. This mayo tastes better than anything I've purchased!
Try it out and use this mayo in this broccoli salad:
1 head broccoli, cut into florets
1 cup mayo
2 Tbsp honey
5-6 strips bacon, cooked and chopped into small pieces (I like to bake bacon on a foil-lined baking sheet at 425*F for about 12-15 minutes)
1/8 cup red onion, diced
1/8 cup raisins
1/8 cup shelled sunflower seeds
1) Add mayo and honey to a large mixing bowl and stir to combine.
2) Add remaining ingredients to the bowl and toss together.
