If you told me 9 years ago before I was married and before kids that there would be a day when I'd love and make meatloaf for my family almost every week, I'd think you were kidding!
Meatloaf is so cliche and old fashioned, right? I didn't even grow up on meatloaf and thought it was weird.
However, I've learned that it is just one of those gosh darn easy meals to whip together and throw in the oven that can basically coordinate with any side dish you want, like this Green Apple & Walnut Salad.
As a busy mom of two, practicality always wins the day!
Ingredients
1 pound ground beef
1/2 cup quick oats
1/2 cup liquid (can use milk, almond milk, or broth)
1/4 + 2 Tbsp BBQ sauce, divided
1 egg
1/2 onion, minced
2 tsp minced garlic
Directions
1) Preheat oven to 350*F.
2) In a large mixing bowl add all ingredients, saving the 2 tablespoons of bbq sauce for the top. Mash together with a fork or with your hands to incorporate all ingredients evenly together.
3) Turn meat mixture out into a loaf pan and press to make it even. If you don't have a loaf pan you can form a loaf and place it right onto a foil-lined baking sheet.
4) Spread with a pastry brush or with the back of a spoon the reserved bbq sauce on top.
5) Bake for 45-60 minutes, until the center of the loaf reaches 165*F.
