Here in Minnesota we just got dumped with another batch of fluffy snow. Love it or hate it, a big batch of yummy oatmeal made the morning a little more enjoyable!
This would be a perfect recipe to assemble and bake during a food prep day to have ready to eat for breakfast each day. It's so simple and whips together quickly.
Ingredients
3 cups quick or old fashioned oatmeal
1 1/2 tsp baking powder
2 tsp cinnamon
1/4 tsp nutmeg
3/4 tsp salt
2 eggs
1 tsp vanilla
1/4 cup honey
2 1/2 cups milk of your choice
4 Tbsp butter, melted
2 apples, diced
Directions
1) Preheat oven to 325*F. Grease with butter a 13x9 inch baking dish.
2) In a large mixing bowl combine the oats, cinnamon, baking powder and salt together.
3) Add the vanilla, honey, eggs, milk and melted butter to the bowl and stir to combine.
4) Layer the diced apple on the bottom of the greased baking dish. Pour the oatmeal mixture on top of the apples.
5) Bake 30-35 minutes.
