Tuna Cakes

Upon writing this post we are right in the middle of this COVID-19 quarantine. Businesses are closed, toilet paper is like gold, and we are all in isolation. Along with that, we are all rushing to the grocery store to stock up on food to the point of empty shelves and limitations on certain items like eggs and milk.


It's a crazy time to be alive, and my prayer is that we become dependent on Jesus in a fresh new way. None of us have been through something like this and we feel more fearful and out of control now more than ever.


I've been through difficulties like this before, stories I'd like to share more about someday. In every difficult, unknown, scary time of my life I have found that these kind of moments open a door in our hearts that no season of contentment can. We need someone to depend on, someone to trust, we need to see the light at the end of the waiting. My prayer is that we seek Jesus as that light and that hope. Because in all honesty, I can't find anything else who offers that kind of eternal hope.

So let's talk tuna cakes! haha...


The last time I went to the grocery store the ground beef was gone, so was every sort of chicken breast and cut of steak. All I could find for meat was cheddar worst brats, cans of spam and canned tuna. I went with the tuna.


And tonight I whipped up some very simple tuna cakes that my whole family loved - even the dog!

Try these out, it'll give you something to make with cans of tuna other than tuna salad.




Tuna Cakes

Ingredients

2 5oz cans of tuna, drained of water

1 egg

1/4 cup diced red onion

1 Tbsp avocado oil (+ more for frying)

1/2 cup almond flour (could sub in breadcrumbs)

1 tsp sriracha (or more if you like spicy)

1/2 tsp dried parsley

1 tsp lemon juice

1/2 tsp salt

1/4 tsp pepper


Directions

1) Mix all ingredients together in a mixing bowl.

2) Heat a skillet over medium-high heat, drizzle in 1-2 tablespoons avocado oil (could also use coconut oil).

3) Form about 1/4 cup of tuna mixture into patties. Fry each patty in the oil to brown on each side, about 3-5 minutes per side.

4) Enjoy with a fresh salad!
