Instant Pot Chicken & Broccoli Cheese Soup

The snow has come to Minnesota! Bring on all of the soups and stews and slow cooker meals to make my winter easy and cozy.


Broccoli cheese soup will always be one of my favorite combinations - is that a midwest thing? Do we just like to add cheese on everything? That sounds about right.

Chicken & Broccoli Cheese Soup

Ingredients

2 Tbsp butter

1 small onion, diced

2 large carrots, peeled and diced

1 head broccoli, diced

2 chicken breasts

1 tsp salt

1/2 tsp pepper

2 tsp poultry seasoning or Italian seasoning

2 quarts chicken broth or bone broth

2 cups shredded cheddar


Instant Pot Directions

1) Set the Instant Pot to 'sauté' function. Melt in butter then add the onion, carrots and broccoli. Sauté the veggies until onion becomes translucent. Turn off the Instant Pot.

2) Add in the chicken breasts and season with salt, pepper and herbs.

3) Pour in the broth. Set the Instant Pot to 'Manual' for 15 minutes. Allow the cooker to release the pressure naturally.

4) Unlock and uncover the lid. Stir in the cheddar cheese to melt into the soup. If needed, turn on the 'Sauté' function to bring to a simmer.

Serve hot and with added cheddar on top if desired.
