It seems in the winter time especially, the food can get a bit heavy. You know what I mean? Lots of potatoes, beef, and more potatoes... Don't get me wrong, I love a good winter pot roast but sometimes something green is a nice change of pace.
This green salad hits all of the marks! A healthy mix of fresh greens like spinach and arugula topped with green apples, dried cranberries and walnuts. It's a combination made in heaven!
Add this salad to your beef and potatoes and enjoy its freshness.

Ingredients
8 oz Spring mix
8 oz spinach leaves
1 green apple, thinly sliced
1/4 cup chopped walnuts
1/4 cup dried cranberries
1/4 cup poppyseed dressing
Directions
1) Add greens to a large salad bowl and toss.
2) Top with apple sliced, walnuts, cranberries.
3) Toss the salad in the dressing before serving, or allow everyone to dress their own.
