Fast & Easy Leftover Hash

By the time the end of the week comes I usually have a refrigerator full of leftovers and veggies that need to be eaten before they go bad. In my house we hate throwing away food, it's literally money down the drain. Leftovers are usually still good 3-5 days as long as they're stored properly. Usually I love having leftovers around because then it's a meal for my family that didn't require much of any cooking for me to do, but sometimes it can get old. This is one way to freshen up those leftovers and recreate them into a new dish!


You could use just about any type of leftovers or veggie combo you have around, so get creative! I've done this style meal with my leftover Chipotle burrito bowl, leftover stir fry, you could even use frozen veggies for an even easier meal. Ingredients

2 Tbsp avocado oil or butter

2 cups chopped veggies (I used cabbage, broccoli, and a sweet potato)

1/2 cup precooked meat (optional, I had Italian sausage lying around)

4-6 eggs (you'll want about 2 per person)

1-2 tsp seasoning of choice (a seasoning mix like this would be perfect! I sprinkled a bit of garlic powder, onion powder, salt, pepper and sesame seeds)


Directions

1) Add the oil or butter to a large skillet and heat over medium-high.

2) Add your veggies and meat to the pan along with 1/4 cup water to help steam the veggies. Season the veggies. Cover and cook about 5 minutes.

3) Make little holes in the veggie mixture and crack an egg in each little hole. Cover and cook another 4-5 minutes.

4) Season with additional salt and pepper if you like and serve an egg or two with some veggies for each person.
