Carnitas (Slow Cooked Pork)

The slow cooker is any mom's best friend. Which means the Instant Pot is like your siamese twin! If you have either option, you're going to love this recipe! This pork is super flavorful and so easy. Plan to cook this recipe at the start of the week because it makes a ton, so you can use this meat in various ways for more than just one meal. You can enjoy this meat in taco shells or with tortilla chips or piled in a taco salad with extra veggies and avocado.

Slow Cooker Pork Carnitas


4 pound boneless sirloin pork roast

3 tsp salt

1 tsp pepper

1 Tbsp oregano

1 Tbsp ground cumin

1 onion, sliced

4 tsp minced garlic

2 limes, juiced

2 oranges, juiced

3/4 cup chicken or beef broth


1) Put the pork roast in the pot of a slow cooker or Instant Pot.

2) Combine salt, pepper and remaining ingredients in a bowl. Pour the seasoning mixture over the pork roast.

-Slow cooker: cover the pot and set to low for 6-8 hours or on high for 3-5 hours.

-Instant Pot: Cover and lock the lid. Set to 'Manual' for 75 minutes. Allow to naturally release pressure.

Serve with shredded lettuce, cilantro, pinto beans, avocado, diced tomato, tortilla chips, etc.
