Plan to cook this recipe at the start of the week because it makes a ton, so you can use this meat in various ways for more than just one meal. Slow Cooker Pork Carnitas
Ingredients
4 pound boneless sirloin pork roast
3 tsp salt
1 tsp pepper
1 Tbsp oregano
1 Tbsp ground cumin
1 onion, sliced
4 tsp minced garlic
2 limes, juiced
2 oranges, juiced
3/4 cup chicken or beef broth
Directions
1) Put the pork roast in the pot of a slow cooker or Instant Pot.
2) Combine salt, pepper and remaining ingredients in a bowl. Pour the seasoning mixture over the pork roast.
-Slow cooker: cover the pot and set to low for 6-8 hours or on high for 3-5 hours.
-Instant Pot: Cover and lock the lid. Set to 'Manual' for 75 minutes. Allow to naturally release pressure.
Serve with shredded lettuce, cilantro, pinto beans, avocado, diced tomato, tortilla chips, etc.
