Beef Fried Cauli-Rice

In this low carb world we live in cauliflower is everywhere. Cauliflower can transform into just about anything it seems ... pizza crust, popcorn, potatoes, and rice.


But it is honestly a good replacement if cutting sugar is part of your goal. Not only do I love cauliflower as rice for it's lower sugar content, but it's also faster! I bought a frozen package of cauliflower rice from Aldi so there was zero work to be done and no guessing if the rice is cooked enough before you lift the lid. Win-win!



Ingredients

1 pound ground beef

1/4 cup coconut aminos

1/2 Tbsp sriracha

1/2 Tbsp honey

1 tsp ground ginger

Salt and pepper to taste

1 Tbsp minced garlic

12 oz cauliflower rice

12 oz stir fry veggies, frozen

2 eggs, whisked


Directions

1) Heat a large skillet over high heat, add ground beef, break up the beef and brown.

2) Season with coconut aminos, sriracha, honey, ginger and salt and pepper to taste.

3) Add garlic, cauliflower and frozen veggies. Lower heat to medium, cover and cook about 5 minutes until veggies are cooked through.

4) Either add whisked eggs to a microwave-safe bowl and microwave in 30 second intervals and mix after each interval or make an opening in the beef and veggie mixture, add eggs and scramble in the pan. Serve!
